Preserving the flavours of tradition

“Lavéc” is the typical soapstone cooking pot made in the valley of Valmalenco. Lavéc is also the name that Nicola Bagioli gave to the workshop where he continues a tradition that has been handed down from father to son over five generations. “I chose this ancient craft because it always fascinated me, and I did not want this heritage to be forgotten. Until a few decades ago, there were more than 50 workshops in Valmalenco, while today I am one of the last remaining.” Lavéc pots are carved from lathe-turned soapstone, which is rimmed with copper to increase its sturdiness and hold the handle. Soapstone cookware is traditionally used to prepare local dishes, and today Nicola’s production is growing in demand amongst starred chefs.

Piatél soapstone dish

The piatél is a soapstone dish made on a lathe. It is circular in shape with a slightly higher rim. It can be used to serve dishes or as a plate for each guest. By heating the piatél in the oven or on a stove, the food will stay warm.

Cioda soapstone griddle with double handles

A cioda is a round griddle made by lathe-turning a block of soapstone. It is bound with two copper handles to enable it to be held easily and to increase its sturdiness. Ideal for cooking meat, fish, vegetables, and even pizza, it allows for natural and healthy cooking, and enhances the flavours in food.

This cooking pot, called lavéc, is carved from lathe-turned soapstone and bound in copper. Some lavécs are made from a single block of soapstone. Since no glazes or varnishes are used during the production process, when cooking, flavours are not altered by external agents, but rather enhanced.
