The knife making shepherd

  • • Gioel takes at least six hours to make one knife
  • • Michelin-starred chef Maurilio Garola was his mentor
  • • He lives immersed in nature

From a knife and tool sharpener with a passion for making knives to a full time craftsman, Gioel Terlizzi became interested in the art of Japanese blades and the different local and traditional knives of Italian shepherds. In recent years, he moved with his wife Carolina to a tiny village in the Piedmont hills, immersed in nature, breeding sheep, making and sharpening knives for the many starred chefs in the region and for clients who get to know him through word of mouth. Gioel expresses his vision interpreting his clients needs, making made-to-order knives using existing blades, engraving and carefully selecting materials for the handles, sourcing wood and horn, and playing with resin’s hues and colours.

Damiano Nigro

This table knife, made of synthetic resin and Nitro B, a type of stainless steel used for kichen knives, is created especially for the restaurant Villa d’Amelia, and in particular for the chef Damiano Nigro, who has a Michelin star. The restaurant is based in Benevello, a small village in Piedmont.

Blue Carbon

This table knife was created for a yacht based in Saint-Tropez. The handle of the knife is made with carbon and blue spacer, evoking the colour of the sea and the blade made from Nitro B, a surgical quality steel.

My special knives

These two knives were made to measure for a special customer. The table knives were custom-made for the restaurant Villa d’Amelia, based in Benevello. The blades are made from Nitro B, a surgical quality steel and the handles from synthetic resin and carbon.

Cutlery

This cutlery was specially commissioned for a house based in Barolo, Italy. The handle of the knife is created from local chestnut wood and the metal worked from N690, a high-quality stainless steel.

My sheep

The handle of this folding knife is created from special sheep's horn and the blade hand forged from C70, a high-quality carbon steel.
